Plainfield's New Bakeries Were Already Baking Here Before They Had Storefronts

October 22, 2026

"Whether you're looking to be the office hero with a box of fresh croissants, bring home a loaf of freshly baked sourdough, or simply treat yourself to something sweet..."

KREMA Patisserie posted that line on Facebook around its opening, and The Herald-News reported that the shop opened Sept. 28 at 14220 U.S. Route 30 and sold out on its first day. The same article says a second bakery, Plainfield Bakehouse, plans to open on Lockport Street in November.

Two bakeries in two months is good news on its own. Neither one is a chain arriving from out of town. One comes from a coffee roaster whose flagship already sits on Lockport Street. The other comes from two bakers who have been selling sourdough off their porches for a while. Plainfield's new bakery season is really a step up for people who were already feeding the town.

Route 30's Croissants Come From a Lockport Street Roaster

KREMA Patisserie is part of the Krema Coffee Roasters family. What Now Chicago reported in August that the roaster has four Chicagoland locations, in North Aurora, Tinley Park, Lockport and Plainfield. Plainfield is the flagship. That flagship is Krema Coffee House at 24038 W. Lockport St. in downtown Plainfield, and it still takes scheduled online orders.

The roaster didn't add pastry to its downtown shop. It opened a separate patisserie across town, at the plaza near 143rd Street and Lincoln Highway, where U.S. Route 30 runs through Plainfield. Big Sammy's Restaurant & Bar and Grace Pointe Church Plainfield share the plaza. What Now Chicago put the drive between the new patisserie and the flagship at about 10 minutes.

The Herald-News confirms three things on the menu. There are fresh croissants. There are sourdough loaves. And there are sweets, which the shop's own post pitches as a treat for yourself. For updates, The Herald-News sends readers to KREMA Patisserie's Facebook page, where the shop announced its opening.

The first-day sellout matters for planning. A shop that sold out on day one hasn't yet learned how much demand to bake for, so the first few weeks reward early arrivals.

Lockport Street Gets a Bakehouse a Few Doors From the Roaster

On the other end of town, Plainfield Bakehouse is set for 24042 Lockport St., Suite 100. The Herald-News lists bagels, breads, coffee, sweets and books on the menu, citing the bakery's website. November is the projected opening. The Plainfield Bakehouse website still says "Coming Soon" and asks visitors to follow for opening news, with no hours or opening day posted yet.

Look at the address. 24042 is on the same stretch of Lockport Street as Krema Coffee House at 24038. So the roaster that took its pastry out to Route 30 will have a downtown bakery just a few doors from its flagship. For anyone who walks downtown, that short stretch of Lockport Street becomes a place to get coffee, bagels, bread and a book on the same morning.

Two owners are behind the Bakehouse, and neither one is new to Plainfield's bread.

  • Kim Wisehunt grew up in Plainfield and owns Blue Heron Bagels in Shorewood. In 2025, The Herald-News profiled Blue Heron as a cottage-food business run from a home kitchen, making hand-crafted sourdough bagels every week. According to the profile, it began when a friend gave her a sourdough kit.
  • Michaela Gallaher lives in Plainfield and owns Gallaher Sourdough, which describes itself as organic homemade sourdough based in Plainfield.

Blue Heron has a built-in habit of change. Its website says it rotates two sweet, two savory and two basic bagel flavors each month. It also runs a monthly program it calls Doughnation, which gives part of its proceeds to community causes. Neither the Bakehouse nor the coverage has said whether those habits will carry over to the Lockport Street storefront. Still, the Bakehouse is starting with bakers who already have regular customers, and most first-year bakeries don't.

How to Get the Bread Before the Doors Open

Both Bakehouse owners still sell the way they always have. Gallaher Sourdough takes preorders through its Hotplate page. In mid-October, the page listed a Friday, Oct. 23 porch pickup at Michaela's home, with a note that Friday drops will continue "until we're much closer to the bakery storefront opening." When that pickup stops showing up on the Friday schedule, the storefront is probably close.

For a reader who wants sourdough this weekend and not in late November, here's the order of operations:

  1. Check Gallaher Sourdough's Hotplate page early in the week. Ordering happens through "drops," and each drop lists its own pickup day.
  2. Look at Blue Heron Bagels' monthly flavor rotation if bagels are the goal. Pickup is on Fridays and Saturdays at a porch in Shorewood, a short drive from Plainfield.
  3. Go to KREMA Patisserie on Route 30 for croissants. It's the only one of the three with a storefront open today.
  4. Follow plainfieldbakehouse.com for the opening announcement. The site says that's where the news will be posted.

Plainfield's Morning Map, as of Mid-October

Here's where each spot stood as of mid-October 2026.

Place Address What it offers Status
KREMA Patisserie 14220 U.S. Route 30 Croissants, sourdough loaves, sweets Open since Sept. 28, 2026
Krema Coffee House 24038 W. Lockport St. Krema Coffee Roasters' flagship coffee shop Open, taking scheduled online orders
Plainfield Bakehouse 24042 Lockport St., Suite 100 Bagels, breads, coffee, sweets, books Projected for November 2026
Gallaher Sourdough Porch pickup, Plainfield Organic sourdough, preorder drops Friday drops until the storefront nears opening
7 Brew Coffee Southwest corner of Route 59 and 127th Street Drive-thru coffee Officially opened Aug. 31, 2026

The last row is there for contrast. The Herald-News covered 7 Brew's opening at Route 59 and 127th Street. After a three-day soft opening, it officially opened its doors at 8 a.m. on Aug. 31. That's the drive-thru side of Plainfield's morning, and it serves the Route 59 traffic. The bakeries are a different kind of business. Two of the three come from Plainfield people, and the third comes from a roaster that calls Plainfield its home base.

Two Ends of Town, One Set of Names

Put it together and the new bakeries sit at opposite ends of Plainfield. KREMA's croissants are out on Route 30, close to 143rd Street. Plainfield Bakehouse will bring bagels and sourdough to downtown Lockport Street, a few doors from Krema Coffee House. The names on both projects are local ones. Krema Coffee Roasters already ran its flagship downtown. Kim Wisehunt grew up in Plainfield. Michaela Gallaher bakes out of her Plainfield home.

That changes what counts as "new." The croissant box on Route 30 and the sourdough loaf you'll be able to buy on Lockport Street come from bakers who were already selling in Plainfield, through a coffee counter and through preorders. What's new is that you'll be able to walk in and buy it. The Bakehouse date is still a projection, so the Friday porch drops remain the surest way to get Gallaher's sourdough until Plainfield Bakehouse posts an opening day on its website.
